Fermentation process
Pre-fermentative cold maceration for 3 days. Fermentation with indigenous yeasts. During this stage daily pumpers and delestages are carried out. The total maceration time is 20 to 25 days at a maximum temperature of 30º-31º. Malolactic fermentation produced spontaneously.Aging
100% of the wine spent 12 months in 2nd use French oak barrels of 225 and 600 liters.Storage in bottle

Tasting notes
COLOR: dark red with violet reflections.
AROMA: red fruits and fresh herbs, species and very subtle oak bring great finesse and complexity.
FLAVOR: the tannins have good grip and structure. With long and fresh finish.

Good with red and white meats, pasta and any type of cheese.
